Ingredients
1.5 lbs med shrimp, shelled and cleaned
2/3 c fresh OJ
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup unsweetened pineapple juice
1 diced mango
1 cup diced jimaca
1/2 small red onion, minced
1/2 cup chopped fresh cilantro
1 jalapeno chili, seeded, minced
2 avocado peeled and diced
1 granny smith apple, cubed
salt and pepper
2 Tbspn EVOO
Preparation
- Cook shrimp in boiling water for 2 minutes
- Drain and transfer to cold bowl of ice. Let stand until cold.
- Cut shrimp into half inch pieces. Put in bowl and stir in fruit juices. Cover and refrigerate at least 30 minutes
- a half hr before serving stir in everything else and mix and refrigerate for another 30 minutes. Serve!
