Ingredients

1 cup egg substitute, or 4 eggs, or 8 egg whites

1 cup old fashion dry oatmeal

1 onion, grated

1 tomato, diced

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon black pepper

1 teaspoon red pepper

2 teaspoons chili powder

3 garlic cloves, minced

2 1/2 pounds ground turkey, 99% fat free

Preparation

Preheat oven to 350. Combine ingredients, do not overmix. Gently form into a wide load in an ungreased 13x9 pan, leaving about 1 inch on all sides.

Bake in middle of oven until thermometer inserted into meatloaf registers 170 F, about 40-45 minutes.
