Ingredients
1 lb. ground turkey
1/4 cup seasoned breadcrumbs
1/2 onion, diced
1 tsp. minced garlic
1 tbl. chopped parsley
1 tbl. Dijon mustard
4 red peppers, halved with seeds and veins removed
Preparation
Combine all ingredients except for peppers in a bowl.
Stuff pepper halves with turkey mixture.
Place peppers on preheated grill, meat-side down, for 4 minutes.
Flip & grill another 4 minutes, or until turkey reaches 165 degrees.
