Ingredients
2 potatoes
1/3-1/2 cup milk
1/4 cup butter, softened
1/2 tsp salt
Dash of pepper
Cheddar or blue cheese
Preparation
Preheat oven to 400 degrees.
Bake potatoes for one hour.
Cut a thin slice into each potato and scoop out inside, leaving a thin shell.
Mash potatoes until no lumps remain.
Beat in milk in small amounts. Add milk until fluffy.
Add butter, salt & pepper to taste & beat with mixer until fluffy.
Add cheese.
Place shells on ungreased cookie sheet. Fill shells with potato mixture.
Bake uncovered 20 minutes.
