Ingredients

2 potatoes

1/3-1/2 cup milk

1/4 cup butter, softened

1/2 tsp salt

Dash of pepper

Cheddar or blue cheese

Preparation

  1. Preheat oven to 400 degrees.

  2. Bake potatoes for one hour.

  3. Cut a thin slice into each potato and scoop out inside, leaving a thin shell.

  4. Mash potatoes until no lumps remain.

  5. Beat in milk in small amounts. Add milk until fluffy.

  6. Add butter, salt & pepper to taste & beat with mixer until fluffy.

  7. Add cheese.

  8. Place shells on ungreased cookie sheet. Fill shells with potato mixture.

  9. Bake uncovered 20 minutes.
