Ingredients

1 1/2 cups peeled, cubed baking potato

1 cup peeled, cubed sweet potato

1 Tablespoon margarine

2 Tablespoons unsweetened orange juice

1 Tablespoon skim milk

1/8 teaspoon salt

1/8 teaspoon ground white pepper

Preparation

  1. Arrange cubed potatoes in a steamer basket over boiling water. Cover and steam 10 minutes or until tender. Cool slightly.

  2. Place potato in a medium bowl; add margarine. Beat at medium speed of an electric mixer 1 to 2 minutes or until mixture is smooth. Gradually add orange juice and milk while beating. Stir in salt and pepper.
