Ingredients
2 English cucumbers, halved lengthwise & sliced
1 red pepper, julienned
1 large Tomatoe, seeded and julienned
1 cup chopped fresh mint
1/4 cup finely julienned red onion
1/2 cup plain Greek yoghurt
2 tbspn extra virgin olive oil
1 tbspn lemon juice
1/2 tbspn apple cider vinegar
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
4 cups baby arugula or mixed greens (optional)
Preparation
Cut cucumber into chunks. Place in a large bowl. Add red pepper, Tomatoe, mint and onion. Stir dressing ingredients until combined. Add and toss to coat. Let stand for 15 minutes. If using, spoon onto greens.
