Ingredients

1 cup coconut milk

2 teaspoons vanilla extract

4 tablespoons chia seeds

2-3 drops liquid stevia

Preparation

Mix milk, vanilla extract and stevia in a medium bowl. Stir in chia seeds. Place in fridge for 20-25 minutes and serve

TIPS & SUBSTITUTIONS: To transform this vanilla pudding into chocolate, simply whisk in two teaspoons of raw cacao powder befo re stirring in the chia seeds! Add cinnamon or ginger for a little kick and feel free to stir in fresh fruit of your choice. I prefer love blueberries or pomegranate seeds.
