Ingredients
1 c sugar
1/2 c butter
2 eggs
2 tsp vanilla
1 1/2 c all-purpose flour
1 3/4 tsp baking powder
1/2 c milk
Preparation
Preheat oven fo 350 F. In a medium bowl, cream together the sugar and the butter by hand with a big spoon. With an electric mixer, beat in the eggs, one at a time. Add the vanilla. Combine the flour and baking powder in a separate bowl. Stir together. Add this dry mixture to the creamed mixture. Mix well. Stir in the milk until the batter is smooth. Pour or spoon batter into cups; 3/4 full if using a muffin pan, 1/2 full if using a cookie sheet. Bake for 15-18 min or until tops are golden brown. Allow to cool fully before icing.
