Ingredients

14 oz. grated firm tofu

3 tbsp olive oil

1 diced onion

1 diced green pepper

3 cloves garlic

3 tbsp chili powder

1/4 tsp cayenne pepper

salt/pepper

1/2 tsp cumin powder

28 oz. can diced tomatoes

28 oz. can pureed tomatoes

14 oz water

2 14 oz cans black beans

Preparation

sautee tofu in olive oil for about 3 minutes. add rest of ingredients EXCEPT water, tomatoes, and beans and sautee for about 5 minutes. when vegetables are slightly tender, add the beans, tomatoes and water. simmer for about 45 minutes.
