Ingredients
1 cups whole wheat pastry flour
1 cup coconut flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons powdered cardamom
1/4 teaspoon salt
1 tea cinnamon
½ c crushed pecans
½ c crushed almonds
½ c oats
¼ c chia seeds
¼ c vegetable or coconut oil
3/4 cup sugar (or alrernative)
2 flax egg
2 cups mango pulp
2 over ripe banana
2 tbl vanilla
¼ soymilk
Preparation
- Preheat oven to 350F. Line and grease a loaf pan with parchment paper and set aside.
- In a large bowl whisk together flours, baking soda, baking powder, cinnamon, cardamom powder and salt. Add nuts, seeds and oats.
- In another bowl beat together the oil, milk, flax egg, vanilla, sugar and mango pulp.
- Add dry ingredients to wet and mix well.
- Transfer the batter to the loaf pan and bake for 50-55 minutes or until a toothpick inserted comes out clean.
