Ingredients

3 ripe bananas

1/4 cup maple syrup

3 tablespoons coconut oil

1 1/2 cup spelt flour

1 1/2 teaspoons baking soda

1/4 teaspoon salt

1 teaspoon vanilla

1 tablespoon fresh grated ginger

Preparation

Heat oven to 350 Prepare muffin tin In a large bowl, mash the bananas and mix in the maple syrup, coconut oil, vanilla and ginger. In a separate bowl, sift the dry ingredients together. Blend the wet and dry mixtures together. Pour batter into muffin tin. Bake for 15 to 20 minutes.
