Ingredients

2 tablespoons sugar

2 1/2 tablespoons fish sauce (red boat brand)

1/2 cup water

1 stalk lemongrass, peeled and chopped

2 garlic cloves, peeled and chopped

1 teaspoon freshly ground black pepper

1 bunch scallions, chopped (abt 1 cup)

2 fillets like cod or halibut

1 tablespoon chopped cilantro

Preparation

  1. Combine sugar, fish sauce and 1/4 cup of water in a large skillet. Bring to a boil and stir.
  2. Add lemongrass, garlic and pepper. Continue stirring for a minute or so until reduced by half.
  3. Add remaining 1/4 cup of water, scallions and fish. Cook over medium-high heat for 5-7 minutes. Leave uncovered, but turn fish at about the 3 minute mark.
  4. Sprinkle with cilantro and serve.
