Ingredients
1 small watermelon, sliced or diced
1 cup torn herbs (cilantro, mint, basil, etc.)
2 oz fresh bean sprouts
1/2 Thai bird chili, minced (or 3/4 tsp siracha sauce)
1 tbsp sugar
1 clove garlic, minced
1 tsp grated fresh ginger
juice of 2 limes
2 tbsp olive oil
kosher salt to taste
1/2 cup unsalted roasted peanuts (for garnish)
Preparation
Put melon, herbs, sprouts and chili in a bowl.
Make a dressing: Dissolve sugar in 2 tbsp warm water. Whisk in garlic, ginger, lime and oil.
Dress salad, season with salt, then toss. Arrange on plate and sprinkle with peanuts.
