Ingredients

1c. olive oil

1 c. finely chopped red onion

1/3 c. coarsely chopped kalamata olives

2 T. Balsamic vinegar

4 oz. crumbled blue cheese

good baguette cut in 1/4" slices

Preparation

In skillet, heat oil med heat. Add onion and saute gently until it softens (5-7 min.) Stir in olives and vinegar; remove from heat and let cool. When ready to serve, crumble cheese into the warm sauce. Stir gently. . cheese should remain in identifiable chunks (it will soften as the sauce sits). Pour into shallow container or individual plates and serve immediately with baguette slices for dipping
