Ingredients

2 cups cubed red potatoes

2 Tablespoons finely chopped purple onion

1 1/2 Tablespoon white wine vinegar

1 Tablespoon freeze-dried chives

1 teaspoon olive oil

1/4 teaspoon suger

1/4 teaspoon salt

1/4 teaspoon pepper

Preparation

  1. Place potato in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Drain; transfer to a bowl. Add chopped onion.

  2. Combine vinegar and remaining ingredients; stir well. Add to potato mixture; toss lightly to coat. Serve warm.
