Ingredients

½ c minced parsley

2 hard cooked eggs, chopped

⅓ c minced pimento

⅓ c minced black olives

4 anchovy filets, rinsed, patted dry, minced

1 T capers, crushed and rinsed

Dressing:

⅓ c lemon juice

½ c vegetable oil

½ c olive oil

Salt & pepper to taste

2-4 16 oz cans white asparagus, depending on number of servings

Bibb Lettuce

Preparation

In a bowl, combine all the ingredients through the capers.

Stir in lemon juice. Add oil in a stream. Season with salt and pepper.

Rinse and dry asparagus, if canned, and pat dry. Chill.

Arrange asparagus on bibb lettuce; spoon dressing on top. Pass additional dressing.
