Ingredients

1 lb. white beans

1 med. onion.

1 bay leaf

2 cloves minced garlic

2 Italian Sausage

Swiss Chard or Spinach

Garlic

Parsley

Preparation

Soak beans overnight. Drain and put in pot with 2" water above. Add quartered onion and bay leaf. Cook until tender. 1 to 1 1/2 hr.

Saute loose sausage in olive oil until lightly browned. Add garlic, cooked beans and chopped greens. Add splash of bean cooking liquid. Salt and pepper to taste.

To garnish, add olive oil and parsley.
