Ingredients
1 Cup Cooked wild rice
1 Cup Cooked orzo or farro
1/3 Red Pepper, chopped ( or even roasted)
1/2 Cup Black olives- sliced
1/2 Cup Sun-dried tomatoes - chopped
2 Tbsp Capers
1/3 Cup Olive oil or Garlic Olive Oil
1/3 Cup Aged Balsamic Vinegar
2 Tbsp Fresh Basil - chopped
1 Tbsp Scallions-chopped
2 Cloves Garlic (Minced)
Salt & Pepper - to taste
1/4 Cup Pignoli Nuts, roasted
Preparation
In a large bowl, combine all ingredients except pignoli nuts. Mix well to cover all with dressing. Cover and marinate 4 hours (overnight OK) . Add pignoli nuts before serving. Serves 8 as a side dish
