Ingredients
3 Cups yellow split lentils
1/2 c oil
1 onion, sliced
1 1/2 t chili powder
1/2 t turmeric
1 or 2 t cayenne pepper
1 or2 t salt
4 1/2 c water divided
2 fresh tomatoes, chopped
2 potatoes, 1" dice
1/2 c cilantro, rough chop
Preparation
Wash lentils. In a large pot, add oil and sliced onions and brown.Add turmeric, chili powder and 1/2 C of the water stir to combine and add the other 4 cups water,. Bring to a boil, reduce heat and cook low-medium for 35 to 60 minutes or until lentals are soft. Add the tomatoes, potatoes and cilantro. Cover pot and cook on low heat until potatoes are tender. Serve over hot Basmati rice
