Ingredients

4 wooden skewers

3 cloves garlic

2 tsp. Dijon mustard

rosemary sprigs

pepper

1/3 c olive oil

1 lb large prawns, peeled & deveined

8-10 slices pancetta

Preparation

Soak skewers in water. In a food processor, puree garlic. Add the Dijon mustard, olive oil & rosemary…blend together. Marinate the prawns at least 1 hour in mixture.

Cut each pancetta slice into two pieces lengthwise. Wrap a pancetta slice around each prawn and thread on skewers. Sprinkle with pepper.

Grill over hot grill about 5 min. per side (don’t overcook!)
