Ingredients
2 medium butternut squash, peeled and cut into chunks
1/2 C. Sugar
2 eggs
1/4 C. Milk
2 Tbsp butter
1 tsp. Vanilla
1/4 tsp.ground cinnamon
1/4 tsp. Ground nutmeg
Preparation
Place squash in saucepan and cover with water. Bring to boil, reduce heat and simmer until tender. Drain.
in mixing bowl, beat squash until smooth. Add remaining ingredients and beat well. Spoon into 1-1/2 qt. Baking dish sprayed with non-stick spray. Cover and bake at 350 degrees for 35 min. Temp. S/b 160 degrees.
