Ingredients
3 cups shredded zucchini
1 2/3 cups sugar
2/3 cup vegetable oil
2 teaspoon vanilla
4 large eggs
3 cups all purpose flour
2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
pinch ginger (optional)
1/2 teaspoon baking powder
1/2 cup nuts, 1/2 cup raisons (optional)
Preparation
-mix ingredients . sugar, eggs, oil and spices first ingredient then dry ingredients. -Add shredded zucchini, nuts and raisons last -Pour butter into 2 loaf pans -Bake 8 inch loaf pan 50-60minutes 9 inch loaf 1 hour 10min until toothpick or knife comes out clean -Cool 10min or more on wire rack. Store for up to 4 days on shelf or up to 10 days refridgertor.
