Ingredients
3 eggs
2 C sugar
1 C vegetable oil
1/4 tsp baking powder
2 C grated, raw zucchini
1 C whole wheat flour
2 C white flour
3 tsp cinnamon
1 C coarsely chopped nuts
1 tsp salt
1 tsp baking soda
2 tsp vanilla
Preparation
Pre-heat oven to 350 degrees.
Combine dry ingredients in a separate bowl.
Beat eggs until fluffy and light; add sugar, oil, zucchini, and vanilla. Mix lightly but well. Add dry ingredients to egg mixture. Stir until well blended, stir in nuts.
Pour into 2 greased and floured 9x5 bread loaf pans. Bake for 60 minutes or until done (toothpick inserted comes out clean)
