Ingredients

1/2 cup dry breadcrumbs

1/2 cup grated parmesan cheese

1 tsp garlic powder

1 tsp dried basil

1 1/2 tsp kosher salt

1/2 tsp pepper

1/4 cup milk

4 medium zucchinis, thinly sliced

Preparation

  1. Preheat oven to 450 degrees & grease 2 baking sheets with cooking spray.

  2. In a shallow bowl, combine breadcrumbs, parmesan cheese, garlic powder, dried basil, salt & pepper. Whisk to combine.

  3. Pour milk into another shallow bowl.

  4. Dip zucchini slices in milk & dredge in breadcrumb mixture. Place coated zucchini slices on prepared baking sheet in a single layer. Spray the tops of the slices with cooking spray.

  5. Bake for 10 minutes or until crisp & brown. Flip & bake for another 10 minutes or until crisp & brown.

  6. For pretty presentation, serve in large cupcake liners.
