Ingredients
5 med zucchini, peeled, grated
1 potato, grated
2-3 med onions, chopped
0.5 cup olive oil
3 eggs, beaten
1.5 cups all purpose flour + 1 TBS baking powder
1 TBS chicken soup base powder, or mushroom soup base.
Salt, black pepper to taste.
Preparation
Preheat oven 350 F. Grease 2 pans 11.5x7" Coarsely grate zucchini, potato, onion using blade of food processor, set aside to drain 5-10 mins. In another bowl beat eggs, then add to drained vegies. Next add oil, soup base powder, salt & pepper to blend. Incorporate flour with baking powder into mixture. Divide mixture evenly in 2 prepared pans. Bake 50-60 min till firm. Remove from oven, let set and/or completely cool. Cut into desired portion squares.
