Ingredients

2 medium zucchini

3 tbs olive oil

3 tbs sunflower seeds, without husks

80 g butter

1 clove garlic, pressed

½ lemon, grated rind and juice

½ tbs sugar

½ tsp sea salt

Preparation

  1. Wash zucchini, remove the stem and cut lengthwise in ½ cm thick slices.
  2. Fry the slices in olive oil, in batches, on both sides until light brown. Slices should stay al dente. Place on a paper towel to remove the excess oil and keep warm. 3.Lightly toast sunflower seeds in a pan without oil; set aside to cool.
  3. Sauté garlic in hot butter for a very brief time.
  4. Add toasted sunflower seeds, lemon juice and zest, sugar and salt to the butter and garlic. Simmer the sauce, stirring constantly, for 3-4 minutes.
  5. Pour the sauce over fried zucchini slices and serve immediately.
