Ingredients

2 lbs zwai

1 1/2 lbs sweet potatoes

black pepper

salt

1 1/2 T olive oil +

2T black olive tapenade

Preparation

  1. Sprinkle zwai with salt, place on plate. Set aside
  2. Heat oven to 400 degrees
  3. Peel sweet potatoes and slice cross-wise to full 1/4 " pieces 4.Spread 1 T olive oil in a large baking pan.Place potato slices in a single layer in foil-lined baking pan;season potatoes with salt and pepper to taste. Place pan in oven
  4. Bake potatoes for 30 minutes, until tender; shake pan occasionally 6.Rinse salt off fish and dry on paper towels; put fish on top of potatoes, brush fish with 1/2 T olive oil; sprinkle with black pepper to taste, spread tapenade over fish, return pan to the oven.
  5. Bake for 8 minutes, until thin blade of knife easily passes through fish. Serve.
